I have eaten this dish many times and have enjoyed it as much as the original and I hope you do too. :) —Catriona Advertisement Makes 4-6 servings 1 /2 cup olive oil 1 /2 cup of chicken stock 1 tbsp. of the vegetable bouillon 1 /4 tsp. sugar 4 garlic cloves, minced 2 carrots, diced 1 pound of kale, stems and center veins removed, torn into small bite-sized pieces (or wait until you have more kale and cut it into large pieces) 2 tbsp. of the lemon juice Salt and pepper to taste Mix together the olive oil, chicken stock, sugar, and vegetable bouillon in a large bowl. Stir well and then add the garlic. Stir well again. Now add the carrots and kale. Toss well with your hands and let sit for at least 10 minutes. Add the lemon juice, salt, and pepper. Taste and adjust seasonings as necessary. For the final 1-2 minutes of cooking add the lemon zest to the carrots and kale. Taste again and adjust seasonings if necessary.
